Black Coffee: The New Event From Michelle Johnson Premieres April 24th

My dear coffee friend, come, sit. It’s time for us to have “the talk.”

It may seem like we’ve had this talk before—the one that involves race and how it intersects with coffee culture, but trust me when I say we’ve barely scratched the surface. We’re living in a time where having difficult conversations about our social climate are becoming unavoidable. They shouldn’t be avoided to begin with; people in the United States and beyond aren’t being afforded the most basic of rights in 2018.

Nearly two years ago, I presented an examination of what this looked like as a barista through my personal lens as a Black woman. Many of the things I experienced still stick with me. Some of them are haunting and others, just pure annoyances.

Since first publishing The Chocolate Barista in 2016, the resulting ripple effect has been mostly positive. I have been able to connect with other Black coffee professionals who knew my experience intimately. They were living it themselves, but many had never vocalized it. There’s now a strong, growing community of us supporting each other through camaraderie and amplification of each other’s ventures. We now have a Black man on the Barista Guild of America Executive Council—an historic first. Groups like I See You and the Boston Intersectional Coffee Collective are hosting events centering coffee professionals of color, driving home the point that we’re still fighting for visibility, representation, and access to opportunities in the industry.

And I put a strong emphasis on still. While there has never been more dialogue surrounding social issues in coffee, race rarely gets much airtime. More often than not, the role of race in coffee culture goes largely ignored. And yet, we have such a rich opportunity right now to change all that. To examine the role that race plays in issues across the coffee industry, from gender discrimination—you can’t ask a Black women to pick which identity to fight for over the other—to issues of gentrification, identity, and the creation of global coffee shop culture.

The microphone is far too often passed over us when the opportunity for dialogue comes.  We don’t want to be spoken for—we want to speak.

In a special live podcast event from yours truly, creative director Michelle Johnson (The Chocolate Barista) and produced by Sprudge Media Network, I invite you to come join a conversation about race and coffee culture.  The panel-style discussion will cover a range of topics from workplace dynamics to the Black consumer experience, and also dive into how we make coffee culture all our own, led by us, for us.

Basket Shapes & Water Quality: Filter Coffee in The Science Lab

What do you need to do to brew better filter coffee? That’s one of the many questions UC Davis Coffee Center is setting out to answer, through a variety of research projects. After all, there’s nothing like hard science for an answer you can trust.

Professor William Ristenpart, the centre’s Director, agreed to talk me through his current work and what we can expect to see in the future. From the impact of coffee filter baskets to water quality and temperature, read on to discover what I learned.

What Is The UC Davis Coffee Center?

The UC Davis Coffee Center is a multidisciplinary university-based research centre dedicated to the specialty coffee industry. As Prof. Ristenpart says, “The Coffee Center is poised to do for coffee what UC Davis did for wine and beer: to become the leading source of scientific expertise in the study of coffee.”

Everything started with the Design of Coffee, the first course he gave about coffee. This introductory class was created six years ago and aimed at freshmen (first-year) students of Chemical Engineering.

While the module began as what Prof. Ristenpart calls “a teaching exercise”, the increasing complexity of the course and the enthusiastic response from the coffee industry led UC Davis to “realise that there was such a tremendous need for both research on coffee science and more advanced education in coffee”. The result was the UC Davis Coffee Center.

The centre has 35 faculty members, 14 listed areas of expertise, and a range of undergraduate and graduate courses. But what I really wanted to learn about was Prof. Ristenpart’s research projects.

Rethinking The Brewing Control Chart

The Brewing Control Chart is designed to help brewers understand the relationship between extraction, strength, brew ratio, and coffee flavour. However, it was also designed in the 1950s. Fortunately, Prof. Ristenpart has been working on a two-year research project with the Specialty Coffee Association (SCA) to update it.

When Professor Earl Lockhart, a food technology PhD from the Massachusetts Institute of Technology (MIT) developed it, it was some of the most advanced coffee research of the time. However, Prof. Ristenpart tells me that his project will be the chart’s first revision in the seventy years since its creation.

Moreover, he explains that there were several problems with the initial study: the sensory evaluations were based on panels primarily made up of housewives brewing with percolators, which, as he tells me, tend to over-extract coffee. The temperature the data was taken at isn’t specified.

“What many people recognise is that it has… technical problems in terms of how the numbers are represented,” he adds. He pictures the improved brewing control chart with a z-axis for temperature.

Filter Basket Shapes: An Impact You Can Taste

The professor has also recently finished a five-month preliminary investigation with the SCA into filter basket shapes. He tells me that there have been passionate arguments about what the best basket shape is – and now, science will be able to weigh in.

“There are two analogists, for the first time, generating hard data corroborating beliefs and right now we are doing a series of more digital physical measurements trying to answer the question: why do people taste a difference? What is it about the basket geometry that affects the final brew?”

The team was able to show that regular people, who aren’t trained testers, were able to tell the difference between coffee made with different basket shapes when everything else remained constant: the coffee beans, grind size, water temperature, basket manufacturer… and more.

“There was an appreciable difference in taste,” Ristenpart tells me. “They were able to taste the difference in the shape and they were not able to taste the 25% difference in the grind size… There was much less sensitivity to that than to the basket geometry.”

Prof. Ristenpart tells me that a lot of this comes down to flow rate. They kept the flow rate of the water being delivered to the top of the grounds the same. However, the rate at which the brew came out in the carafe depended on the basket shape. Since the feed flow rate was the same, the delivery flow rate was treated as a function of the basket shape.

“What I hypothesise,” the professor says, “is that, in the future, more advanced coffee brewers will, just as a matter of course, allow you to dial in very specific flow rates. Some more advanced brewers already do that; most do not… but I think the flow rate will be a control parameter that more and more people will be aware of as affecting the final flavour.”

Flow Rate, Mass Transfer, & Basket Shapes

So, why does flow rate have an even bigger impact on flavour than grind size? That’s another one of the questions the team at UC Davis is attempting to answer.

But their work isn’t easy, because flow rate isn’t just about time: it’s also about the mass transferred and the quantities of different chemicals and molecules within that.

Prof. Ristenpart tells me, “One of the things that I study is understanding how the fluid flows through the coffee grounds, how the convection affects the diffusive mass transfer out of the coffee grounds into the coffee that we’re drinking.

“It’s actually a really complicated problem,” he continues, “because there are so many different molecules that are undergoing mass transfer. It’s not just one or two… there are about 1,000 different flavour molecules that are identified in roasted coffee so, from a chemical standpoint, it is very complicated.

“From a physical standpoint, it is also very complicated because of the basket geometry. The flow is not the same everywhere so scientifically it’s a very challenging problem – but a fun one.”

The Relationship Between Water Temperature & Basket Shape

Water temperature is just one more variable affecting the professor’s research. While most brewers could tell you that higher water temperatures increase the rate of extraction, there’s a lot more to the topic.

For example, both viscosity and mass transfer proficiency are affected by water temperature. Prof. Ristenpart tells me that they have “exponential temperature dependencies; in other words, small temperature changes have a very big impact on some of the physical and chemical properties in the system”.

And coming back to filters, the basket geometry will affect the heat transfer within it. Even though the water temperature delivered may be consistent across different filters, that doesn’t mean the temperature of the water the grounds are reacting with is the same.

Prof. Ristenpart tells me that he and his team found “so far about a three or four-degree temperature decrease when using the flat bottom vs the conical [baskets]. So, three degrees by themselves is a lot, but it is actually quite a bit in terms of that exponential temperature dependence.”

For now, they’re using a constant temperature for their experiments. In the future, they also intend to study the effects of different water temperatures.

Water Quality: One More Factor to Consider

The coffee industry is waking up to the importance of water quality, with awareness growing among coffee-lovers over the past few years. Books like Christopher Hendon’s Water for Coffee have helped this trend.

Prof. Ristenpart tells me that it’s been well-established that water hardness can affect coffee brewing. Hardness refers to the number of ions – especially calcium and magnesium – that is in a water sample.

Yet more recently, he says, researchers have been noticing that the composition of the ions is also important. Two samples may have the same overall hardness, but one may be richer in magnesium while the other has more calcium. “Because the ions are different, they affect the details of the mass transfer.”

It’s early days for this research; as the professor tells me, they have qualitative data and theoretical work but “there is not a lot of hard data yet so that is definitely one of the goals that we have.”

And in the future, we can expect to hear more about water quality from the UC Davis Coffee Center, which is in the process of partnering with companies to create a water lab. “We recognise that the water quality is crucial for making good coffee,” Prof. Ristenpart says.

With a dedicated research and education centre for coffee, there’s great potential for the future of brewing. As we begin to glean insights into the science behind our favourite drink, we can improve both the quality and consistency of it. Prof. Ristenpart has set out to treat coffee the same way as we do wine and beer – and already we are seeing great results.

Filter basket shapes, water temperature and quality, and new brewing charts: these are excellent first steps in a journey towards better coffee. So, here’s to a future with even more research.

Royal Coffee Hosting Four Events Around Japan

Royal Coffee is hitting the road again, but not like the road road, more like the air road this time, because y’know, there aren’t a lot of roads that cross the Pacific Ocean. Starting this week, they will be hosting four different events around Japan that will feature some very cool special guests.

The tour starts Friday, March 30th at 7:30pm at FabCafe in Tokyo with a roasting demo and Q&A with Coffee Wrights’ roaster and co-owner Yuki Mune. After the talk, Ikawa will offer spectators a chance to roast their own coffee using Royal-created roast profiles. The event will conclude with a cupping of some of Royal’s coffee and a chance to use Minedrip Coffee’s new flavor wheel app. Tickets for the event are ¥1,000 and can be purchased here.

Then, two days later Royal heads to Osaka for a collaborative roasting event at Hoop Coffee. Four roasters—Lilo Coffee, Rio Ashiya, Hoop, and The Coffee Time—will each receive a green coffee from Royal, which will all be presented, cupped, and discussed at the event. But bad news for everyone who doesn’t already have a ticket, as this event is sold out. The good news for residents of Osaka, though, is that a cupping and brew instruction will take place the very next day at School Bus Coffee Stop.

Finally, Royal will be heading to Gunma on April 3rd for a cupping hosted by Kaffa Coffee.

At Chiquitito, A Tiny Cafe Makes It Big In Mexico City

It begins in London, where Jeremy Clouser and Cecilia Morales were working toward their master’s degrees. In a city known for its amazing coffee culture, the couple felt inspired to bring some of the British capital back to their home in Mexico City. They wanted to open a cafe, and so, in 2008, Clouser took another educational plunge and enrolled at Portland’s American Barista School.

Then, in 2011, a small space opened up in Mexico City’s Condesa neighborhood. Or rather, a tiny space opened up in Condesa, and Clouser and Morales found themselves repeating the Spanish Chiquitito, over and over and over. And so their first cafe was named “tiny,” and they filled it with a La Marzocco Linea PB and beans from Caffè Pecora, which owns and operates a farm in Veracruz and a roastery in Mexico City.

Clouser and Morales would go on to open a second cafe in Cuauhtémoc after their first, and now are beginning to iron the kinks out of their third, in Prado Norte, a beautiful financial district near a residential area called Las Lomas. The cafe is equipped with a La Marzocco Strada and, in addition to sourcing beans from Pécora, offers coffee from Café con Jiribilla, the roasting arm of Avellaneda.

Clouser and Morales’ partnership with Pécora persists today in large part because of their shared vision with Carlos Avendaño, the company’s head farmer and roaster, whose ethic is one that prioritizes traceability. The three have a strong connection and believe that the keys to transparency are shortening the production chain and collecting quick feedback. As Chiquitito grows, Café Pécora does as well, but the transparency of their supply chain remains unchanged.

While Chiquitito is the first specialty cafe in Prado Norte, it and its historic name have so far been well received. Slightly larger than the previous locations, this newest cafe is already populated by locals and those working in the area—it represents an evolution of a tiny model that’s already proven to be a success.

Starbucks Achieves 100% Pay Equity In The United States

Say what you will about Starbucks, they do a lot of the heavy lifting on the arduous path of progress. From initiatives to hire 10,000 refugees worldwide to a recent commitment (and $10 million) to develop a recyclable, compostable cup to then-CEO Charles Schultz going on national television to actively speak out against then-Republican presidential nominee What’s His Face, the ubiquitous green mermaid has put its money where its mouth is on social issues time and time again, even when it meant boycotts. Stupid, stupid boycotts.

And on Wednesday, Starbucks continues to find themselves on the right side of history with the announcement that they have achieved 100 percent pay equity for all genders and races in similar roles in the United States.

According to Starbucks chief partner officer Lucy Helm, reaching 100 percent pay equity has been roughly 10 years in the making. Helm, who discussed the announcement at Starbucks 2018 Annual Meeting of Shareholders on Wednesday in Seattle, states that “the company will now work ‘with deliberate speed’ toward closing the gender pay gap for all partners in company-operated markets worldwide,” according to a press release.

In their push for pay equity globally, Starbucks will work with the Billie Jean King Leadership Initiative, the National Partners for Women & Families, and the American Association of University Women to encourage other multinational companies to follow suit “by sharing the principles and tools the company uses.”

The Coffee Sprudgecast Live From SXSW 2018

SXSW, or “South By” as it is known to the badge-wearing crowd, is too big to describe in a single sentence. Or in multiple sentences, even. Sprudge partnered this year with SXSW and a dozen-plus innovative coffee brands to bring the first-ever Roaster’s Village to Austin.

And in the middle of all that, we hosted a wild, overpacked raging party of a live taping of the Coffee Sprudgecast at Caffe Medici, on 2nd and Congress in the heart of downtown. Coffees from Port of Mokha flowed like wine alongside craft beers and conversation. The decibel level kept rising and rising. A hundred or more people flowed in and out of the space and kept on rocking out into the night, perhaps to Westworld.

And so we podcasted, but that’s only half the story. Joining us in the middle of the maelstrom were Rebekah Miskin, a Toronto-based actor, writer, and producer in town to debut her new web series Night Owl, an official selection at the 2018 SXSW Film Festival; Mokhtar Alkhanshali of Port of Mokha, a frequent guest of the program and subject of The Monk of Mokha by Dave Eggers; and Brett Cannon of Department of Brewology.

What Is Terroir and Why Does It Matter?

Terroir: we hear it more and more often when talking about coffee. But what does this mysterious word mean? What does it have to do with how our beverage tastes? And why should coffee-lovers, baristas, roasters, producers, and more care?

I reached out to several leaders in the coffee and wine industries to answer all these questions and more. Read on to discover what I found out.

What Is Terroir?

Let’s start with the basics. “Terroir” comes from French and is most used, in English, when talking about wine. Pamela A. Villablanca Núñez of Latinamerican Specialty Coffee Alliance and Bee Coffee Shop says that the word “literally means soil, dirt; whatever you think around the soil is terroir.”

But when we speak about agriculture, it gets more complex. She defines it as “specific characteristics of soil composition; temperature; rain; micro, macro, and mesoclimate; and particular cultural procedures applied to agriculture.”

Keith Pech of Damarli Estate, Panama echoes Pamela, telling me that terroir encompasses everything around where coffee is grown. It’s not just the soil and climate. It’s the whole environment, including the people and the local knowledge.

Why Does Terroir Matter?

Stefano Biscotto of Chambers & Chambers Wine Merchants says that terroir “brings out the characteristics of the given variety.”

But, since every terroir is different, this means that it brings out these characteristics in different ways. In other words, terroir is what makes a Colombian coffee different from a Brazilian, Ethiopian, or Indonesian.

For instance, even if you plant the same variety of coffee – say, a Villa Sarchi – at 1,400 m.a.s.l. in Costa Rica and 1,900 m.a.s.l. in Panama, they will taste different. Even though these small countries are neighbours, the higher altitude of the Panamanian coffee will lead to a cooler climate which, in turn, will most likely cause the coffee to be more acidic and sweeter.

For consumers, terroir affects how brewed coffee will taste. But for roasters and producers, it has an even greater impact. Roasters will need to choose a roast profile based not just on the beans’ potential flavours and aromas but also on their molecular composition – something that terroir can impact on.

And producers will need to adjust their production and processing methods (themselves part of terroir) based on the local geography, climate, and resources.

Thiago Borba of Burgeon Specialty Coffee Trading tells me that “the most important moment to acknowledge terroir is prior to planting the seeds.” He states that knowledge about terroir “will determine the plantation system” as well as “the varietals that will assure the best quality, cost efficiency, pest resistance and production productivity.”

“Good Terroir” & “Bad Terroir”

No matter the subject, “good” and “bad” is always going to be subjective. Nevertheless, the phrases “this is the perfect terroir” and “due to its terroir, this is good-quality coffee” are commonplace.

Pamela tells me, “There is no such thing as bad terroir. There are more adequate varieties suited for a specific terroir.”

Keith has a similar opinion but links it to quality. He believes that, if your aim is exceptional coffee, it is much harder in some regions and countries than others. He uses the cup scoring system, in which every coffee can be graded out of 100. Coffees that ranks 80+ are specialty while 90+ are rare and normally extremely expensive lots.

Within specialty coffee, certain countries have better reputations than others. Costa Rica, Colombia, Ethiopia… these are all acknowledged as producers of excellent coffee. Brazil and Indonesia, however, are often associated with more affordable crops.

This hints at one of the many limitations of terroir: the fact that countries like Brazil are, despite this reputation, capable of producing high-cupping coffees. Take the 2017 Cup of Excellence, in which nine natural and pulped natural coffees were scored as 90+.

Some countries may have a terroir that’s more suited to particular varieties, coffee flavours, and cup scores: that doesn’t mean it’s impossible to produce that coffee there.

3 Key Factors for Terroir

So, now we know that terroir brings out certain characteristics of a given coffee variety and that some terroirs are more suited to certain coffees. But can we also attempt to understand what makes a terroir ideal for growing high-quality specialty coffee?

My interviewees highlighted three key factors:

1. Soil

With “terroir” meaning of the earth, it’s no surprise that soil is on the list. Thiago tells me that minerals in the soil “can affect the body and the acidity of the grain.” In particular, Keith explains that volcanic soil is great for coffee. It’s rich in nutrients such as magnesium, phosphorus, potassium, calcium, and zinc, all of which are essential for the plants.

What’s more, Keith explains that volcanic soil has deep drainage. Thiago elaborates on this, telling me that “soil with more air-through and higher amounts of organic materials can guarantee better water retention during rainy seasons, creating reserves for the dry periods”. In turn, this directly affects how plants access nutrients and minerals.

2. Climate

Coffee production generally happens within a region called “the bean belt”. It’s a region that stretches around the world, sitting over the equator but extending as far north as Mexico and Myanmar and as far south as Brazil and Tanzania.

Yet within the bean belt, there are many different climates – macro and micro. You’ll often hear coffee professionals talk about a coffee’s microclimate. This refers to a small area with a markedly different climate to that of the region. It may be caused by sheltered valleys, for example.

Keith tells me that it’s important to have distinct dry and rainy seasons. “[The] rainy season helps you to grow the plants, the fruits to grow, and the trees to gain all the nutrients,” he explains. On the other hand, during harvesting, rain is a bad sign. It can damage the cherries, slow down drying, and more. And according to Keith, the dry season also helps with the following harvest as it prompts flowering – something that’s necessary for new coffee cherries to grow.

3. Elevation

All of my interviewees mentioned elevation or altitude. As Keith says, “the higher you go, usually the sweeter and the higher quality the fruits are going to get. Because, for one, it adds acidity. It’s similar to wine.”

But this isn’t actually about elevation. It’s about climate. “It’s really the weather, the temperature,” Keith continues. “The colder atmosphere creates more acidity both in wine and coffee.”

Thiago tells us that this “directly affects the process of maturation of the fruit. The fruits with slower development have characteristics such as a higher concentration of sugars, and so, more complexity and higher density.”

Since elevation is really about temperature, it’s important to also consider the distance from the equator, wind factor, and more when talking about it. Elevation can be a useful tool for comparing two farms from the same region; it’s not so useful for comparing, say, an Ecuadorian coffee with a Mexican one or a Yemeni coffee with a Kenyan.

Terroir: Is It The Most Important Thing in Coffee?

“In wine,” Stefano tells me, “it’s everything.

“When you talk about terroir, it is mother nature speaking to you. When you have a heavy hand in wine, then you cancel out the traits that mother nature is handing out to you.” He also adds that for this reason, the wine industry has recently seen a growing trend of “natural wine”, in which humans have minimal involvement in the making of it.

But is this also the case for coffee? Is terroir everything?

“Processing,” says Keith “in my opinion, is more important than terroir… Processing can definitely triumph over the terroir if you know what you are really doing.” This is the method by which the coffee seeds, or beans, are removed from the cherry flesh. Depending on how the coffee is picked, fermented, dried, and stored, processing may add flavours – some positive, some negative. It can improve a coffee’s quality or reduce it.

Thiago adds, “Terroir can improve quality but it does not assure quality in the cup by itself. Appropriate harvest management is also crucial… from choosing the ideal area (for plantation) up to the drying process.”

Of course, as we’ve already discussed, local processing practices can form part of terroir. Brazil, for example, is known for its naturals and pulped naturals – processing methods that bring out sweetness and body. The country’s dry climate is perfect for these methods. On the other hand, Kenya is well-known for double washed processing: an extremely clean method that adds almost no flavours and allows the coffee’s natural profile to shine.

However, sometimes a producer will choose to experiment with their processing methods or go against local traditions in some way. This lies outside of terroir.

And, as Pamela states, “the human factor is key to achieving an amazing final cup.”

Climate Change: What Now?

While it’s debatable whether terroir is the most important thing, there’s no denying that it is important. This makes climate change a daunting prospect for many producers. As Stefano says, “You cannot talk about terroir without talking about climate change.”

He tells us that “climate change is really affecting terroir.” With increasing temperature, those cooler temperatures that produce sweeter, more acidic coffees are no longer found in the same places.

“People are trying to go up the higher elevation… to capture that acidity and the freshness,” he explains. He also says that many wine producers are adapting to the changing climate by switching to varieties more suited to warmer weathers.

More than 100 million of the world’s population depends on coffee for their livelihoods. But by 2050, researchers predict that the global area suitable for coffee production may be reduced by 50%.

“Where are [producers] going to be in 10 years?” Stefano asks. “Terroir right now is evolving as the climate is changing.”

What does that mean for coffee, wine, and other crops such as cacao? How far up can we go? And how much can the human component play a role in ensuring a product’s quality, despite the changes in terroir?

Perhaps, only time will tell.
