¿Vas a un Viaje de Café a Origen? 10 Cosas que Necesitas Empacar

Así que decidiste hacer un viaje al país de origen de un café. Has hecho tu investigación, hecho todas las conexiones correctas, y reservado tus vuelos. Ahora todo lo que necesitas hacer es empacar – pero si pensabas que esto iba a ser la parte fácil, estás equivocado.

Quieres viajar sin tanto peso, pero tampoco sin nada.  Porque arrastrar maletas pesadas es una molestia; no tener suficiente ropa a prueba de agua u olvidar tu analgésico es peor.

Nunca temas, porque hemos hablado con tres profesionales del café para averiguar cuáles son esos elementos esenciales. Sigue leyendo para descubrir las diez cosas, no todas tangibles, que no puedes olvidar agregara a tu lista.

Los Profesionales del Café

Samuel Coto es un agricultor Guatemalteco de café , sourcer, e importador de EEUU para Third Wave Coffee USA. Danner Friedman es un Q-grader quien trabaja en Ventas de Café Especial para  Balzac Brothers. Y Ben Weiner, el hombre detrás de Gold Mountain Coffee Growers, exportadores directos/importadores con su propia fincas nicaragüenses, Finca Idealista.

Entre los tres, tienen la experiencia de visitar productores, de ser productores, y de ayudar a los productores. Y han planeado muchos viajes de origen. Aquí están los diez ítems que no querrás olvidar.

1. Repelente contra insectos

Sin duda, tendrás contacto con los bichos decualiquiertipo durante tu viaje. Y bien podría ser que, como diversos bichos viven en diferentes países, así que tu cuerpo reaccionará de manera diferente a los mosquitos que te encuentres en cada país de origen. Inclusive, puedes tener una reacción alérgica a algunos de estos insectos. Así que usa un repelente fuerte, preferiblemente con alta concentración de DEET, para mantener a raya estas pequeñas plagas.

2. Ropa adecuada

El repelente de insectos no cubrirá todo, ni te protegerá del clima. Asegúrate de llevar camisas ligeras de manga larga; pantalones; un sombrero; zapatos de senderismo; y calcetines. Y esto para buen tiempo. No te olvides de empacar también un juego completo de impermeables, incluyendo botas altas a las que les puedes añadir una capa extra de protección con espray impermeable. Haz todo esto y estarás protegido de los bichos, el sol y la lluvia, todo lo que sea probable que encuentres cuando te aproximes al ecuador.

3. Medicamentos y Productos para la Salud

Tu cuerpo está a punto de experimentar un montón de cosas nuevas, y nuevos alimentos, alergias y diferentes estándares de agua pueden arruinar tu viaje. Para mantener a raya a la mayoría de los sospechosos habituales, lleva un desinfectante de manos para la limpieza, ibuprofeno para los dolores de cabeza, y las náuseas o las tabletas si te enfermas en el viaje. Habla con tu médico para ver si te pueden recetar antibióticos para molestias estomacales; si no, toma las pastillas más fuertes que puedas comprar. Hay otros medicamentos que puede usar, especialmente para las alergias. Por último, no olvides tu bloqueador solar y algunas curitas.

4. Una Buena Cámara

Derrocha y lleva algo mejor que tu teléfono para este viaje. Vas a querer tomar tantas fotos– y videos- como puedas, y en alta calidad como sea posible. No solo será un gran momento, sino que las fotos serán de ayuda como herramienta de marketing una vez empieces a tostar o a distribuir. También, considera la posibilidad de llevar una tarjeta de memoria de repuesto.

5. Moneda

Puedes contar con que en la finca no uses tu tarjeta de crédito.  Los cajeros van a escasear una vez dejes la ciudad. Es más, mientras puedas usar tu propia moneda, las tasas de cambio serán dolorosas. Asegúrate de obtener la moneda local antes de dirigirte a más zonas rurales; es la manera más inteligente y sin dolor de asegurarte de tener el dinero que necesitas.

6. Regalos

Esta es una forma amable de mostrar tu aprecio y construir relaciones fuertes con las personas locales, aunque debes revisar las costumbre locales antes que compres algo.

Además de buscar por google, pregunta a otras personas, que han ido a viajes similares, sobre lo que llevaron o vieron la necesidad. Oh, y sólo lleva regalos  pequeños y portátiles. ¡Eres tú quien va a llevarlos, después de todo!

7. Altímetro

Aunque no es estrictamente necesario, tanto Friedman com Coto recomendaron llevar un altímetro. Estos aparatos son divertidos para la comprobación y el seguimiento de tu elevación en diferentes puntos a lo largo de su viaje – y por lo tanto, ayudando a entender por qué el café sabe de la manera que lo hace.

8. Papel e impresiones

A veces lo antiguo es mejor. Y si no estás convencido ahora, espera hasta que tu teléfono se quede sin batería. Lleva algunas impresiones, mapas y bloc de notas – ¡y no olvides el bolígrafó!- También puede haber otras herramientas anticuadas, no digitales, que desees empacar, dependiendo de tu itinerario. Piensa con antelación y considera lo que usas en tu teléfono y para qué: desde antorchas hasta diccionarios de frases , asegúrate de tener una alternativa  a la mano.

9. Morral

Incluso si viajas con una maleta, un morral versátil es una necesidad. No menosprecies la capacidad de aventar  un puñado de ropa, granola y tu AeroPress en una bolsa para un viaje rápido de un día. De esta manera, no tendrá que arrastrar todo a la vez – y tendrás las manos libres para hacer cosas como mirar las plantas de café y tomar fotos.

10. Preguntas

Y, por último, es absolutamente esencial  hacer tu investigación antes de llegar a tu lugar. Tener preguntas listas y preparadas demuestra que te importa, muestra que tienes un propósito definido y asegurará que no olvidarás nada importante. Preguntas sobre sostenibilidad, métodos de procesamiento y distribución serán información clave a medida que continúes el proceso de encontrar el origen correcto para ti. Y no tengas miedo de hacer la misma pregunta en dos fincas diferentes, porque cada productor tendrá diferentes métodos – a menudo los que se han transmitido a través de las generaciones.

How Coffee Shaped 17th Century Science

Science has done a lot recently to help coffee and its reputation; most studies published today agree that coffee is a healthful drink. “Good looking out, Science,” we all say, but it turns out, Science is just returning a centuries-old favor. A new article on Smithsonian.com describes how, along with chocolate and tea, coffee “overturned a 1,500-year-old medical mindset.”

According to the article, medical science up to the 17th century relied upon concepts from Ancient Greece, including the idea of the humors:

Writers including Hippocrates and Galen believed the human body was composed of four humors, or fluids: blood, phlegm, black bile and yellow bile. The key to this pseudo-medical system was balance. Every individual, the thinking went, had a unique humoral composition—and if their body fell out of equilibrium, illnesses befell them.

According to ancient medicine, we’re all just gross skin sacs trying to stave of sickness by keeping our unique goo blend from leaking everywhere, which isn’t too far off from one current theory of human composition. If your humors got out of whack, a doctor would prescribe you certain foods to help bring you back to equilibrium—cold foods for a fever, “hot and dry” foods like peppers and wine for indigestion, etc.

During the mid-16th century, coffee, chocolate, and tea arrived in Europe from North Africa, South America, and China, respectively, and exploded in popularity. But these foreign beverages (chocolate was predominately a beverage at the time) posed a problem for the humoral system, namely how to categorize them for medical use. As University of the Pacific professor of history Ken Albala states on coffee:

Some physicians viewed the drink as having a heating effect. Others claimed coffee cooled the body by drying up certain fluids (an early acknowledgement of coffee as a diuretic). All three drinks… were astringent, but if mixed with sugar, their flavor was richer and more pleasant. Were they medicinal in all their forms, or only some? The answer depended largely upon the physician.

This trouble categorizing coffee, tea, and chocolate “explode[d] the old system from the inside,” according to Mary Lindemann, a professor of history at the University of Miami. The article states that though it didn’t fully die until the 19th century, this was the beginning of the erosion of humoral theory.

And it’s all thanks to coffee, tea, and chocolate. You’re welcome, Science.

Workers At Gimme! Coffee Have Voted To Unionize

 

On Wednesday, May 31st, 22 non-management employees at Gimme! Coffee—a New York specialty coffee roaster and cafe brand founded in 2000—officially voted to unionize. This marks the first labor union to ever be formed at an American third wave coffee company.*

The union will begin negotiating a new contract and covers employees of all of Gimme! Coffee’s locations in Ithaca, New York, who are now members of the Workers United Local 2833, as per the Tompkins County Workers Center. As of this time it is not clear if there are plans to expand to cover employees of the three retail locations in New York City.

The unionization effort was led by Samantha Mason, with help from Workers United-Rochester Regional Joint Board. The primary concerns of the workers were reported to be making a living wage without depending on tips and better transparency within company operations. Here’s a transcript of the intent to unionize letter sent to Gimme! Coffee’s owner Kevin Cuddeback, shared with permission:

Dear Kevin,
For many of us, Gimme! is more than a job. It is a community where a cup of coffee becomes more, and we thank you for that. We thank you for making Gimme! a home, and it is because of our love for Gimme! that we want to do everything we can to improve it.

In this time of progressive revival, we, the Members of the Gimme! Coffee Workers United Organizing Committee, are embarking on a grassroots unionization of Ithaca’s restaurant/beverage community. Inspired by your leadership and commitment to social justice, we believe that Gimme! has the potential to reimagine and revolutionize the concept of a “union” and can serve as a progressive business model not only in Ithaca but in the region and possibly the nation. This new model seeks to increase the success of the enterprise while at the same time offering employees an independent voice.

We trust in your vision of Gimme! as an ambitious specialty coffee shop in all respects, and that is why we believe Gimme! can create a new holistic approach to managing restaurants, bars, and coffee shops. Our goal is for Gimme! to be the first to create a unionized sector where the employee/employer relationship can be collaborative, improve the lives of both the employee and employer and be in solidarity with the working class generally. We understand that forming a union can seem like an attack, but we assure you that we see the union as a tool to sculpt a modern employee/employer relationship that befits a new era of social progress. This is not an ultimatum, but an invitation to a progressive partnership. We believe this course is the best way not only for employees but for the future growth of the company. Again, we want to collaborate, not fight, and we hope you consider Gimme!’s revolutionary potential.

The ownership at Gimme! was reportedly not resistant to the process, with CEO Kevin Cuddeback taking a neutral stance. “My decision to remain neutral was largely influenced by this statement,” Cuddeback tells Sprudge. “If Gimme Coffee can be a pioneer with respect to power sharing, I think that’s a win. If we can become more effective at learning and responding to what frustrates and motivates baristas, they’ll be happier at work (…which customers love).

While the baristas at Gimme! Coffee look to expand this effort to encompass other local food and beverage workers in Tompkins County, it’ll be interesting to see how this might affect the specialty coffee industry at large. In the growing effort to secure a living wage for coffee professionals and a larger sense of involvement at the barista level, unionization provides one avenue towards both. The coffee world will be watching these developments at Gimme! Coffee closely.

Nice Package: Kaito Coffee In Hudson, Quebec

Quebec coffee roaster Kaito keeps their coffee design clean and simple. Co-Founder Holly von Hoyningen Huene tells us that this “comes from our desire to make people feel that specialty coffee is not a complicated, intimidating affair. It can be fun and easy and everyone should feel welcome to appreciate it.”

Sounds good to us! They don’t want to go overboard with simplicity, because how dreadful would that be? “We don’t want to oversimplify and undo all the hard work we are all doing to educate coffee drinkers about the truths and facts about their favorite beverage,” says von Hoyningen Huene, “so our back label has all the other important details about the coffee in the bag and our color-coded approach.”

Let’s take a closer look at Kaito Coffee Roasters with Holly von Hoyningen Huene.

Tell us a bit about your company.

We launched Kaito Coffee Roasters last year in our hometown of Hudson, Quebec, Canada, which is near Montreal. We roast on our beloved Loring S15 in a small but beautiful space.

Our mission is to showcase the amazing (and too often unknown!) spectrum of taste experiences that exist in the world of coffee. And we want to do it as simply and delightfully as possible. We do it by curating the coffees we source into one of our three color-coded collections, each defined by their own gustatory profile. This way, we cover the full range of experience you can have with coffee. Appealing to coffee novices and connoisseurs alike, these collections are designed to encourage anyone along their coffee journey–easily allowing them to discover and navigate the world of coffee like a pro.

We describe our collections as follows:

Coffees in our blue collection are like trusty companions. You can expect a cozy, familiar taste experience with these coffees. Perfect for people looking for full body coffees, low in acidity, with flavour notes more in the nut, dessert, spices and subtle fruit categories.

When did the coffee package design debut?

We launched our business last year with this design. Since we print the labels in-house, we’ve been able to make small adjustments to fine tune the design.

Who designed the package?

We worked with the awesome Dima Yagnyuk at designstudio.io in Vancouver who helped us create our branding.

What coffee information do you share on the package?

The front of the bag is very simple. It states what’s in the bag with the color-coded logo. The back of the bag elaborates on the front. It explains our color-coded system and offers pertinent details about the coffee itself – origin/producer, varietal and processing info with a link that leads to the coffee’s full story on the webpage.

Where is the bag manufactured?

We purchase the bags from Pack Plus Converting. The labels are from Onlinelabels.com.

For package nerds, what type of package is it?

It’s a 12 oz matte white, flat-bottom bag with a black tin tie and valve.

Is the package recyclable/compostable?

Unfortunately not. We care deeply about this issue though and are currently looking into a few different options for sustainable packaging. We plan to transition within the next year and we’re very excited! But even thought the packaging material itself will change, the concept and values that drive our package design will live on.

Where is it currently available?

Our next door neighbor and main local partner in town, Mikko Espresso & Boutique, is always
stocked with our coffees. Our bags can also be found at various independent partner shops in Quebec and Ontario. Otherwise, our coffees are always available to order from our online shop. We ship globally.

Can you tell us about the bird in your logo?

His name is Wazo. When we developed our logo, we drew on our admiration for the design duo Charles and Ray Eames. We used their Eames House Bird as an inspiration to our own bird’s shape and form. Like the Eames, we wanted to have our own bird live in the world with us and be part of our day to day and storytelling. We worked with origami artist extraordinaire Ross Symons from White on Rice in Cape Town to bring him to life. Anyone can learn to fold their very own Wazo here:

Why Do People Taste Food & Drink Differently?

This question is a little bit nature, a little bit nurture. Let’s start with the nature side of it.

Just like good eyesight, some people have good tasting abilities. But it turns out that people with a highly attuned sense of taste actually prefer… a little bit less taste. They want bland food that won’t overwhelm their senses – think balance, rather than brilliant acidity.

Does Taste Change?

Take two people: one who drinks instant and one who drinks specialty coffee. Give them both a cup of 90+ Geisha. One of them will think it’s one of the best drinks they’ve ever had. The other? They’ll find it… odd. If they’re being polite, they might tell you it’s “very interesting” – but when offered another, they’ll stick to instant.

This isn’t just because of the psychological impact of expectations. It’s also because our tastes change. They change over time, but also in response to past experiences. They adapt to what we drink and eat a lot of. (Your friend whose eyes water with the first bite of a mild curry? They might be a supertaster, but they might also just need to get used to spicy foods.)

And that has a lot of ramifications for the third wave coffee industry. So let’s take a look at why and how taste buds change.

What Does This Mean For Third Wave Coffee?

The subjectivity of taste opens up a lot of questions for the specialty coffee industry. We’ve quantified taste with a 0–100 scale of quality and the Coffee Tasters’ Flavour Wheel, based on years of research and refinements. There are training programmes dedicated to helping people recognise these smells and tastes.

Yet what does it mean when people taste differently? Well, it’s a reminder that industry opinions and consumer preferences may be different. You might find a coffee deliciously sweet, but some customers may still want sugar.

Secondly, it opens up the idea of training the palate and the importance, for people who want to improve their cupping skills, of tasting a wide variety of coffees.

Whether you want to provide a better customer experience, or improve how you taste coffee, understanding that people taste differently is a great start.

¡Honduras! Este pequeño pero hermoso país se ha convertido en una fuente fantástica de café de especialidad para el mundo. De hecho, es el más grande exportador de café en Centroamérica. Pero no solo el café ha ganado un reconocimiento mundial, sino también su cantidad de actividades turísticas.

Hoy, estoy echando un vistazo a dos ciudades en el oeste de Honduras: Copán Ruinas y Santa Rosa de Copán. Dos encantadores destinos de viaje, que ofrecen mucho que ver y hacer. Copán Ruinas es también la ubicación de dos sitios arqueológicos mayas famosos. Y además, encontrarás gran café en ambos lugares.

De hecho, Copán es una de las seis regiones productoras de café de Honduras, conocida por su prolongado sabor en boca, cuerpo completo, notas de chocolate, y balanceado. 1.Café Welchez (Copán Ruinas)

Situado justo al lado del Parque Central, el Café Welchez ofrece una hermosa vista de la ciudad que va con su fantástico café. El café se cultiva en su finca, Santa Isabel, y se tuesta en el mismo lugar. También puedes visitar Santa Isabel, si quieres saber más sobre el café que estás bebiendo.

2.Café San Rafael (Copán Ruinas)

El punto para resaltar de cualquier visita al Café San Rafael es sentarse en su relajado jardín, bebiendo un buen café y mordisqueando un poco de queso gourmet.

Establecido hace 10 años por una familia local, la cafetería cosecha, tuesta y toma su propio café en la Hacienda San Rafael. También producen varios alimentos artesanales, incluyendo el vino italiano (que puedes comprarlo por la botella en su tienda)

Este es el lugar perfecto para probar la tradicional comida casera hondureña, ya sea desayuno, almuerzo o cena. Y la cafetería en sí es preciosa, gracias a sus vistas de la finca.

Kaldi’s Koffee Shop es un café situado junto a la catedral católica en el corazón de Santa Rosa. Jorge, propietario y Barista jefe, es un excelente anfitrión. Él te guiará a través de la degustación tanto de los cafés hondureños como internacionales.

Pero Kaldi’s no es sólo sobre café: es también sobre el ambiente. Este lugar regularmente tiene vida con jazz latino y otra música en vivo.
